Here's a fairly simple and delicious paleo style meal.
INGREDIENTS
1 Avocado
1 ring of red capsicum
A few baby spinach leaves
1 Egg
1 small handful of ham
Cracked pepper & rock salt to taste
METHOD
Slice Avocado in half, remove seed and take out about half the avocado flesh with a spoon
Chop up spinach leaves, capsicum & ham
Crack egg into mixing bowl & add other ingredients. Mix well
Carefully pour mixture into the 2 avocado halves
Place on baking paper/tray
Cook in oven (I used fan forced/grill) at 180-200 degrees or until top of mixture becomes golden brown and treat is cooked through
Serve with mixed salad and garnish to taste. Can be eaten warm, or cold.
